The primary reason it’s in early access, despite the main game being finished, is because we want to touch up the main game a bit more, and without spoiling anything, there is a second main quest that goes beyond the original ending, nearly doubling the length of the game.

The things we’ve done already and plan to add for that post-game main quest are complex and that’s what’s adding so much time to development. Several additional dungeons, optional super bosses and side quests, and the true end.
