A note on the ma po chili mac recipe: works fine with gochujiang sauce which is widely available; also if you get good szechuan peppercorns (avail at Amazon, H-Mart, etc) they’re awesome but VERY strong, start with a little less than 1 tbsp rather than the 2 tbsp they suggest

You can also opt for zuppa Valdostana (from the Italian side of Mont Blanc) and add a heap of Savoy cabbage.
Otherwise it’s just Better Than Bullion, white wine, lots of thyme, and whatever days-old bread that needs to be dispatched.
I love cabbage in soup! Pistou is another great and easy one.
