I think it takes a little while for your body (and mind) to know it can now stop, you may have a few uncomfortable days of being on edge til you get the hang of it. Sounds like you need it though.
Try to see rest as something broader than laying down on the couch, that is good too, but not all rest is. When I go to the gym, my mind rests. When I’m invested in reading something complicated, my body rests but my mind doesn’t. Try to find moments where a part of you takes a break in some way
it can be hard to go from lots of structure to nothing, so consider making a (very loose) daily routine for yourself, with e.g. rough meal times, time to get outside, and then blocks of unstructured time
but remember to only stick to that as much as is helpful. if you want to eat earlier or walk longer or get caught up in a hobby and stay up late then maybe that's just what you need
and someone else said remember that rest is broader than just lying down. look up the 'seven types of rest'. idk how definitive or scientific it is, but it's a helpful framework for checking in with yourself each day and thinking about what you want or need to do with your unstructured time
