Depends on the seasoning - some stuff is going to lose the aromatics if you put it on before taking it off of heat. Clearly this guy doesn’t care about aroma or flavor though
Said like a true Englishman. But like everything else about your culinary tradition, it's wrong. Salt and pepper is a bare minimum, while it's true you don't want to put any heavy seasoning on veal, some herbs as well can be very good.
