Is there a way to tell all those versions apart and to actually know what you get in the end? I still have the weirdly stretched DVD version sitting on my shelf, I don't know if you can even get a "better" version.

Somehow I can't see exactly what you are replying to, but the B5 Blu Ray release is a world better than the DVD's. Not stretched.

Prime Video is a streaming service, so they have to base their content on some existing version. I was wondering which version was used this time.

I'm pretty confident it is the Blu Ray source. Mostly in high resolution, but any scene with CGI, even when integrated with live action, is an old standard resolution.

Wikipedia cites a January 2021 article by Engadget's senior editor (who cited a WB source) about the 2020 remaster. The Engadget article said the "film sequences" were scanned in 4K and then downscaled to HD, and the "CGI and composite" scenes were "digitally upscaled to HD."
