I remember New Year in Edinburgh about 30 years ago, we left a pub (a real ale’r in our group wanted to “move on”) couldn’t get in another, bought some whiskey from an offy and partied in Princes Street (before ticketing became a thing). Was excellent, you don’t need the organised fun!
