I did this in virtual box as well. I can't remember if it's kde or xfce. Need to circle back and play with it a bit more. Had alpine originally to get a feel for the OS to build Docker images.

I think they got a little slower since then, but machines got much much faster. I got used to the super minimalist thing though so still do it anyway.
I don't like how gnome works either. I would rather be able to minimize windows or tile them. (Not snapping windows)
Gnomes annoyingly forces their design on you and gives you little option as a user to fix it.
Gnome is a bit laggy when doing all of its animations & search but the chunky interface works great with touch.
Plasmas mouse first interface sucks for touchscreens but it's far smoother & snappier.
They're both ok on slow hardware.
Apparently my niece is still too young for a computer because she broke the screen and lost interest because the touchscreens stopped working.
What's truly slim & light is a window manager with the bare minimum needed to do your work like sway.
Web browsers are a problem. I'm using librewolf. Back in the day I used w3m which was excellent, but then the web got too much javascript for that to work anymore.
I'm working on dropping thunderbird, which I use for the calendar.
My arch install was filled with years of fixes for my Nvidia card. So I did a fresh install of fedora when I switched to amd.
I just wanted to get back to work and plasma was easier. My mother loves gnome because it's different from windows and pretty.
My Nvidia card actually worked on arch Linux at the time. Gnome & hyprland had the best Wayland support for Nvidia back then too. Basically I started on arch Linux.🤣
