I want one like this, Burghausen in Austria, It basically follows the entire ridge of the hill, it's a kilometer long, courtyards, battlements, and gates the whole way.

That being said, I think my personal castle ideal is the kind where I mix and match my favourite architecture to create a monstrosity that architecture professors will point at and tell students, "see that?! Don't do that."

Also, at least one really good sewing room.
