If its okay to ask, what do you think is a more reasonable approach for a starting comics publisher? I wouldve thought focusing on zines and group projects might be fair

Small projects are great learn-by-doing opportunities. Pre-press, creator management, editing. Figure that stuff out when you're just in a Discord with five friends, Not of a mailing list with 75 near-strangers!
