I've started to make simmer pots (fruits/herbs/spices on a stove for smell) in an old, horribly stained, practically wrecked aluminum pot... I would have never thought of it, but I guess there isn't all that much difference between deglazing and what a simmer pot is doing. That's pretty cool!

Yeah! It's actually lovely! I can't light candles anymore because they're bad for Mipha, but this has been a great alternative. My current fall-ish recipe is Orange/Apple/lemon/Cinnamon sticks/ginger and nutmeg powder, and a splash of vanilla. Makes the whole house smell like something's baking

Prolly from any acids in the foods you simmered plus the hot water loosening it up! That's how you get fond off the bottom of pans/pots from cooking too.

That's wild!! Yeah I used oranges and lemons so that checks out. I was just stunned to see how nice and clean it was after wrestling with the stains for so long, never thought a simmer pot would make it basically brand new again

Now you have done it. I'm gonna be trying to research the scientific reasons as to how it 'seemingly' cleaned it. right now I am posturing on the specific enzymes might have worked in conjunction with heat.
