I focus on perfecting my cooking technique
It’s really insanely easy. It’s really just about getting a system
The dosa was passed out and shared, as it's become a thing to bring your favorite food from home to share with the other kids.
I think they were excited i wanted this over the American breakfast buffet they had 😅
(no shame in pre-made - my wife's stepdad is from Kerala, and he buys the refrigerated batter)
I let it ferment in the oven.
On my long-lost blog, I described the result as something along the lines of "a cheese-like stench extruded from the oven, visibly displacing a column of kitchen air."
Or you can buy the instant packets and add water but that is not as good
thanks, old orchard yeast!

Yummers.
We can make dosa with different kinds of rice, and different kinds of lentils.
No need to soak separately. Soak together and grind. Let it ferment for at least 5-6 hours. THEN add salt. If needed add some water; batter should be a tad more watery than pancake batter.
Medu vada are good too with sambar
Have you got a tawa?
