This game though, it just feels different. I think I've struck the right balance.
Time spent on the document is just more workload later on.
I also started one day with absolutely zero knowledge of programming and Unity with a bunch of tutorials on Youtube and here I am!

Wish you the best of luck. :) If you'd like an advice, I'd say keep things simple. My biggest mistake over the years has been that I'd design my games too big. There's only so much one person can do.
A side scrolling platformer or a side scrolling beat em up
I'd write an initial design document, outlining important features and the overall structure (3-4 pages) and then stick with it as far as possible.

Based on a quick Google search, there aren't many low cost options for indie devs. But I found a service where footage can be submitted for a relatively low cost.

Oh and remember to do documentation. If you have clear game mechanics written down, it's easier to make the thing.
While at it, it's a good habit writing code in a way that makes it usable outside of that particular project.
