I also find this super annoying! Especially the whole hand your credit card to the server and they take it and bring it back with the receipt

Big adjustment for me moving to NY is how much cash is preferred in NY, but almost everywhere I've been also has an Apple Pay reader...

I still don't see that very often, but tend to come across that more in Manhattan than anywhere else. It started during covid when retailers were clinging to any margins they could get, but has mostly gone away or isn't enforced these days.

Credit card vendors have 2-4% processing fees (partially to cover fraud and charge backs), so when money got tight the costs got passed onto the consumer.
