Let's start with Japanese curry ramen. You won't find it on that many restaurant menus outside Japan, it's more of a home-style dish. A good way of using up some spare curry broth and ramen noodles for a quick week-night meal. 2/🧵

Instant noodles are of course, a derivative of the original. Alkaline wheat noodles. Part of what separates say, Italian spaghetti, from fresh ramen noodles is that alkaline component. It's what gives the noodles their famous chewy texture and "bite" 5/🧵

So where do alkaline wheat noodles come from? Tracing their origin *into Japan* is fairly straightforward, there's a decent consensus that they reached the Japanese home islands after via trade routes linking Japan to mainland NE Asia. But that only gets you as far as China... 6/🧵
