I think we can see, quite literally, a simplification of visual language, as films are being made to be watched on phones. Thus, the tendency to arrange shots to focus towards center screen.

Probably so, but this is also how a large portion of people consume content on general, and especially at home. It is like they expect to get the gist of the content through osmosis.
