Q: Do we really need mechanics for social interactions? Can't we just hash it out with the GM? Give and take between PCs and NPCs. Dialogue options like a video game are also an interesting option.

Having some way of abstracting or putting rules around social interaction can serve multiple purposes. The first is that it levels the playing field, so naturally charismatic or socially adept players don't "autowin" social situations in game.
Also, social mechanics can highlight other play loops, like tracking reputation and status with factions to drive other mechanics.
