Is everyone just dropping support for Safari like I get that you can't cater to every browser on earth but is the market share really so small at this point? (Please do not recommend other browsers. Consider that I, an adult on the internet, is probably aware of other browsers.)

More than anything it boils down to web devs not wanting to test against anything except Chrome.
This sucks and both companies and individual devs should be called out more for it.
We are also past the time where support folks can ask, "Have you tried deleting all your cookies & site data?
I have no interest in adding any more apps than are absolutely necessary to my device. I suspect most iOS users are the same on installing a browser, so figure 20% of the mobile traffic?
Safari *is* an outlier, and not a very well-documented one. Things you can take for granted on every other modern browser sometimes require some hack to work on safari.
