macos quartz font renderer ignores font hinting instructions and afaik doesn’t use subpixel antialiasing so type tends to look a lot more natural at the cost of being a little softer than windows (windows uses hinting to basically distort font shapes to fit the pixel grid for extra sharpness)
Mac seems to just do fonts well. I remember when I was doing some Japanese stuff and it worked fine and very seamless over there, but yeah Unicode support on windows has always been iffy and you have to do a lot of junk to make it function at all let alone well.
