It is, I agree. The most obvious choice is The death of Ivan Illych which you probably know. Penelope Lively’s Moon Tiger comes to mind. Anne Tyler’s Noah’s Compass might fit. Mrs Palfrey at the Claremont by Elizabeth Taylor.

Not really sure about the exact definition for a “Coming of Death” novel so sorry if my interpretation is wrong.

My initial suggestions would be:-

Stoner by John Williams
Train Dreams by Denis Johnson
