PSA: Ragù isn't made with milk or cream. A small minority of Bolognesi might use milk, but in 30 years I've never seen it. The two 'variants' are whether you add a little panchetta to the beef and whether you add a pinch of sugar (many ppl remove the acidic watery seeds from the tomatoes instead).
