From what I've heard, VRChat allows alt accounts, as long as you don't attempt to use the alt to ban-evade. So, using the same ID across multiple alts would not necessarily be defeating the purpose, as long as they are legitimate alts, and not two separate people.

Otherwise, it's up to VRChat how much data Persona stores. They can decide to keep or instruct Persona to remove the data they don't need (s:2). You're still dependent on trusting that VRChat and Persona set this up properly.

VRChat also has the option to define how long until your data is kept within Persona before its automatically deleted (could be immediately, but also up to three years) (s:3).

Ultimately, I don't think age verification will be "risky" for people to do.

Also, it's up to VRChat to delete your data. If you request for Persona to delete your data, they will forward the request to VRChat first either way. So I would not be surprised if VRChat implemented the ability to "wipe all trace of me that you and Persona have" natively.
