Just updated iOS to 18.3.1.
So looks like with every new Apple iOS update from here on out, you’ll have to go back into Settings > Apple Intelligence & Siri and toggle it off.
Even if you did it on the last update, new updates override that and have you in as default.
Seems sneaky to me.
