Maybe one or two mid combat, but they won the combat after the rebirth, hence why they're still here.
Is there a limit on how many times they can do it?
If he has to exhaust it more than once mid-combat though, he's in trouble.
Usually combat is done by the second though. He pulls all the stops upon first rebirth, and at that point you've hit Final Raid Boss status.
Which is, again, why he's still with us. ;)
He is still a healing/recovery potion seller across a variety of realm, in which case his recovery drinks are his actual best sellers.
But it makes sense for a Phoenix to be good at recovery magic
