They shoot 2 seasons back to back each time. The UK in general has more experience at keeping shorter seasons on a fixed schedule, because they’ve always made short seasons. This is still a relatively new way of doing business in America, especially as we’ve gone from 13 ep seasons to 6 ep seasons.

But shows like Slow Horses seem intentionally divided into short 'seasons,' which end showing future clips and no one ever seems to age from season to season.

Plus, a show having a ton of episodes per season usually means you're not getting the best possible content. You're getting whatever they could fill a quota with.
Also reminds me, some comedian had a bit about how "No, you can't have a 14-hour long movie".
Then again, sometimes a season is really short and they still fuck it up. BBC's Sherlock for example.
