I've explored gRPC already with pure Kotlin. I'm hoping Spring can provide more seamless ways to create gRPC endpoints because without it, it reminds me a lot of creating enterprise applications with things like Wildfly, WebLogic, JBoss, Websphere, Tomcat, Jetty etc etc completely independently.

Yah - just define some beans and start over he spring app in the normal way. If you have spring-boot-starter-web it’ll integrate with the servlet stack. Otherwise, it’ll use its own port.
