Egg salad is a nope from me. As a general rule, I am not down with protein (egg, tuna, chicken, ham, etc.) or starch (rice, pasta, potato, etc.) based salads.
When my BIL use to be my roommate b4 marrying my sister, Sunday football days started with Mike's egg sammies. Whip up egg & fry, add tomato, fresh onion, cheese, on bread. Vacon optional on side. Soooo good & good for soaking up sat night booze hangovers lol
Boil eggs in pressure cooker for easy peeling.
Grate egg with box grater (use the big holes).
Mix in a bit of mayo, small blob of Dijon mustard, and a couple drops Worcestershire sauce. Salt and pepper. Optional: celery chopped small.
Most delicious on fresh grainy bread with some nice lettuce
I have to admit, I bought a little Dash egg cooker (it was 10$) and I find it insanely simple for making hard or soft-boiled eggs. No cleaning, way less energy.
I’ve started cheating and buying the precooked and peeled eggs in a bag for egg salad. 😜
Yup, boiling and peeling eggs isn’t that hard, but to your point…a lot for a sandwich. Easy peasy if you just have to open the bag and put them in a bowl!!

Lots of mayo, lots of S&P, old cheddar, and pan fry the bread like you would a grilled cheese.
I like an open-faced situation.
