I don’t care for ‘math’ being pluralized by other countries/languages. ‘Maths’ just feels wrong and I can’t be convinced otherwise even though it actually makes more sense because ‘math’ is a whole bunch of stuff.

Same, but each to their own, I say. Maths seems to be the standard in the country that created the English language, so I've made my peace with how annoying it sounds to me whenever I hear or see it 🤷🏻♀️😉
Yeah but they still say "maths" even if they're only talking about one thing. Solving a single addition problem is still "doing maths;" not, "doing a math."
It is very much as George Bernard Shaw said: "England and America are two countries separated by a common language.” So I just assume we both are correctly different on these things
You could ask the same question by saying maths or mathematics. It's not as though by saying 'math' there are no longer more specific branches, it's still shorthand for the plural form.
It's just what you grow up with, of course; and probably no right or wrong for either. (Me, Australian, full bladder, in the LA Museum of Art trying to recall Americanese for 'toilet'...)

Math is a macro, maths is just being lazy and not specifying the specific sub-category
