First off, the battenburg stout sounds banging! Which brewery is that? And second, lemon in beer is a hard one to get right you either go to strong and it'll be a overpowering sour mess, or go to low and get what you described as hops and water, there's a little bit of a sweet spot in between 1/2
I can see that working slightly better to be fair as the lactose with strawberry would work quite well. After seeing a brewery roast coffee beans in an IPA and making it a "coffee sour" I stopped judging what breweries will try 😂
