Having fun proficiencies in D&D is like half the fun of having a character, right?? Like having many skill proficiencies and tool proficiencies that are niche and driven by backstory??? Why does 5e make it so hard to get more than 4 skill proficiencies and 1 tool proficiency-

Also IIRC, Tasha's introduced the option of change the starting ability score stats to be what ever you'd want. IE instead of your High-Elf being 2DEX 1INT, you can switch it to like 2CHA 1CON, or 1CHA 1CON 1WIS
Alternatively consider non 5e ttrpg systems
But also perception proficiency is forced and is used for initiative for scaling purposes and limit proficiency gain from races to 1.
