I sometimes knit a pair of shorties, using contrast heel (and toe if necessary!), to use up my leftover sock yarn!

I’ve made one shorty sock with around that much - I don’t much mind mis-matched socks. I’ve also done heels/toes and used the rest as waste yarn to hold sleeves, etc. there are also a bunch of scrappy sock patterns on ravelry if you use it!
