I like them all for different reasons
Dark souls 1 got me into the series and has the best map
Dark souls 2 tried to do a lot and while it wasn't perfect still is a solid game
Dark Souls 3 is wild fun
Elden ring brings the open world for better and worst
Bloodborne is an epic
Without DS we have none

For me it'd be DS1, BB, DS3, Demon souls, ER, DS2.
Didn't play sekiro.
I also think DS2 is the one that could benefit most from a full remake.

Yeah probably but I really love the jankiness of DS2 tbh. For me it would remove some of the charm, I know there are people who feel the same way about Demon's Souls but I've never played the original

Oh I don't mean try and patch up the story or lore or anything. Give it a bit of a facelift, dial in the mechanics to fit more with the others. I always interpreted the irrational geography as part of the world's ability to skew with space and time.
