I know a lot of people don’t like Brussels sprouts. And maybe you legit don’t! Many people do not. But remember, Brussels sprouts are basically broccoli, and so if you like the one you COULD like the other.
This is how I make them.

I did not think I liked Brussels sprouts at first either for both those reasons.
Husband said he didn't like them. I roasted them with balsamic glaze and, surprise!
He liked them.
This radically changes the texture from mushy to crunchy. It also provides more surface area for yummy things to stick to.
* Or maybe roasted; it's been decades.
I like to toss them with olive oil, salt, garlic and onion powder, pepper, a dried herb mix, and (this is key) MSG.
But MSG is fucking delicious. My rule of thumb is to use about half as much MSG as I would salt.
v. basic: toss with salt, olive oil, rosemary, put in air fryer/roasting oven
fancier: add parm
even fancier: add a little bacon, parm
super-duper fancy: all of the above + toasted pecans
I can make frozen work, but it takes some effort.
When they screw up their fave and say yuck! they are probably not overreacting.
Brussels sprouts are one of my number one most favorite vegetables. I want everyone to love them, too! Thank you Courtney for this delightful thread, and thank you farm workers for harvesting them!

If you're vegan - roasted brussel sprouts with olive oil and nutritional yeast.

, and oven roast them. Let them cool down a bit and serve them as a warm salad with toasted walnuts, shaved parmesan, and capers. Dijon mustard, lemon juice, and olive oil as dressing.
You get a delightful crunch and then soft chew.
Except now I'm wondering why I never thought to use MSG. Definitely doing that next.
When I shred them (pulse in food processor briefly) they bake faster and make a delicious topping on other things.

I recently roasted them with some olive oil and a dry onion soup mix then ate them with some spicy honey hummus 🤌

Yes, horses can have brussel sprouts. He also likes sweet potatoes. But nothing will ever beat how semi-feral he gets over an apple.
Obviously no one on this thread has ever been in an aircraft cabin on an international flight at 1:00 in the morning when Brussels Sprouts have been included in one of the meal choices at dinner. You’ll never, ever eat another one. A smell I’ll never forget.
I was not a fan of them either, but I only ever had them steamed or boiled until I learned this method.

Dice bacon and fry up. Remove 90% drippings. Add to Sprouts.
350 for 25 minutes on tray.
Stir and flip
20 minutes more. Take out
Add blue cheese crumbles.

I buy them fresh. Wash, cut in half, toss in a little oil with some KSP (kosher salt & pepper), and bake until tender with crispy outer leaves. Makes all the difference
I do same initial prep as you, then cut in half & toss w/butter & honey, & pan sauté face down ’til brown, & finish w/salt & pepper. Dad was amazed. “These are actually good!”

Sprout lovers can’t taste it.
Blanch/ParBoil while whole and intact. Drain and cool completely.
Clean, peel, slice in half lengthwise.
Sear, grill, blacken, broil with desired seasonings.
The thing is I didn't like either of them as they were served to kids in the 70s. But Brussels Sprouts have since been redeemed. Lima Beans? not so much

One way I do them:
*Trim & cut in half
*Parboil for 5 mins
*Sautee small pkg of pancetta until most fat is rendered
*Add the sprouts & sautee until slight browned
*Add a few tbs maple syrup to caramelize

I loved these when I had easy access to brussel sprouts! So tasty.
Also if you have an oven pan that works well stovetop, sauteing cut side down before roasting is a cheat code to perfect browning.

The at-home prep is roasted or fried with salt, pepper, olive oil, finished with balsamic, sometimes bacon bits.
