his is literally just onions and garlic, meat, a bunch of canned tomato products and canned beans, and then elbow macaroni at the end. it is designed for cooking for 200 boy scouts on top of a mountain so it's very minimalist
I have stripped down, period authentic version of chilli that only has things a cowhand could have on hand in the field and it has more then that (dried mushrooms!)
Probably because it can be made easily in bulk; like a cook would on a cargo ship.
Those kind of cooks would be the majority in the Canal Zone, at any point in its history.
Big fan of a generous pinch of crushed hoja santa in chili and in black beans— I used that plus cumin, cayenne, some small dried red peppers of forgotten origin and a big dried pasilla pepper (and Bean Year kidney beans) for chili the other night based on my mom’s under-spiced (chili powder) version
