How did they do that? Well, there's at least one way we know of. In Gingy's dialogue to Farquaad, where originally he would say "Do you know the Muffin Man?", he would instead reference "Pin-Pon," a similarly well-known children's song from Latin American culture.

The script for Princess Fiona's dialogue was also amended so she would use a Spaniard's way of speech, specifically drawing from old Castellan Spanish. Donkey also uses a few catchphrases of comedic characters played by his dub actor, for example when he speaks to Dragon.

The script also went through a few other revisions that were not necessary to adapt it to Mexican culture. Gingy would originally reuse Tiny Tim's quote from the end of A Christmas Carol, "God bless us, every one!"; that was removed in the dub, but more likely for religious reasons.

Additionally, certain lines were revised to use well-veiled foul language! Yes, you read me right. Foul language, in a movie made for family audiences!
