I haven’t taken the dive but have been getting linux-curious. Is there a core set of tools (IDE if any, etc.) or specific version of linux you’d recommend for game dev?

I finally took the dive this last Nov with Linux Mint. Both VS Code and Steam were among the easiest in the move from Win11. I had to find a replacement to OneNote, but thanks to that, I got a serious upgrade to Obsidian. Also, Docker seems to feel even snappier.
Honestly, I'd just go for whatever looks best to you! A lot of stuff just works for coding. I use Fedora, though it can take a little bit more setup since they intentionally don't include proprietary stuff by default. For coding I just use VS Code!
