13 now. This one with a week and a half deadline over Thanksgiving

I don't know what's in the water but I've received 12 notifications of an offer this week and there's no way I'm keeping up with this

I've been seeing more and more agents express how the old 2 week standard isn't enough time any more. Is it appropriate to ask the offering agent for 3? (If/when that time comes, I really want to set agents and my story up for success!)

I think it depends on how many queries/fulls you have out and the time of year and how you feel about. If it is over a major holiday, it's always OK to ask for three weeks. If an agent pushes back on three weeks, IMO, they don't have your best interests in mind.
