Looks and sounds absolutely delicious (I love cooking with almonds anyway). I’ve seen a recipe that uses polenta instead of almonds which also sounded great…but would that version be similar in consistency to the almond version?
Yes, it works fine - same quantities as in the recipe (which I always find gives me quite a lot of syrup). I think that’s a 20cm cake tin but I’ve used a bigger one before which gives more of a torte depth.

I don’t suppose you have any recipes for getting through a massive Costco Christmas cake? Tried mic’ing it and serving with brandy sauce like it was Christmas pudding. That was ok but only used 0.1% of it. Need some inspiration.
It’s become a family tradition - for my Spanish family! They absolutely love it. And Spanish clementines and Spanish almonds lend themselves to this recipe perfectly.

Icing sugar, and flavoured with real vanilla.

We've made it a few times, and I'm pretty sure it would. Might have to experiment a bit with cooking times though, given that the required dense consistency is a bit different from most cakes.
I don’t see why not. I’d probably have the oven a bit cooler – say 180°C rather than 190°C – and I’m not sure how long they’d need without trying myself, but I should think around 20 minutes
Would this recipe work if I cooked it in the Holiday Fir tin that you use for the Spruced up Vanilla cake? I would love to try that but a bit worried that the points might overcook and burn. Thank you!
I've made this a few times but end up with mouldy cake because I don't eat cakes it's just too much for my husband. I realise that is because it is so moist.
