This was duck liver which is typically better because ducks are given a cleaner diet. It’s got a certain texture that most people don’t care for. It’s was typically poor immigrant food. I kinda dig the no frills quality.

Because disconnected these days as a premium protein the animals tend to be raised very well and their diet is reflected in the liver, which didn’t taste too metallic at all.
