So, if a Canadian were planning a trip to the UK that will involve starting in Edinburgh and ending in London, is there any real benefit to aiming to fly all the way to Edinburgh with the LHR connection, or should I just take the train up?

Book an “open jaw” ticket so you fly into EDI and out of LHR. It’s usually the same price as a standard return and avoids issues with connections on separate tickets
If you’re going to meander your way down on the train via other cities anyway then it’s just easier to fly up in the first instance
If you’re already at LHR I’d suspect the plane makes more sense. Parts of the train ride are lovely but presumably you’ll see at least some of it on your way south.
Flying is best option, thou only going to mention this in case u really like trains, London to Scotland is one of only 2 night sleeper trains, so depending on arrival time, the night train is like 10pm and you wake up in Edinburgh and beyond. Could be away to get over the flight and save on hotel.
It's an often an expensive train journey unless you are booking way in advance and you may find flying is cheaper. It's worth checking the pricing for Lumo though who are a low cost train operator - they can have fares from about £45 if you get in early.
Considering it'll take 40 minutes to a hour to clear security, baggage etc, then a train into central London about 30 minutes with all your luggage, then a long train with plenty of stops worrying about bags and the crazy train prices it's easier just to connect straight in Heathrow
UK trains can be expensive, you would be best off comparing the price of flying vs train. A bus/coach such as Flixbus will likely be the cheapest way of making the journey but is also slow. Flying is likely to be fastest.

So could avoid a connection in Heathrow entirely!
I think they run 4x/wk in April/May so not daily but if you’ve got a day or two of flexibility it shouldn’t be an issue
