Well, I'm back from Sri Lanka and this is my first attempt at an Arrack Sour.
50ml Ceylon Arrack
20ml simple syrup
25ml lemon juice
15ml Aquafaba
Wet shake, filter the ice out, then a dry shake to make the foam
Angostura bitters and a slice of lemon
Worked quite well for a first try.
