I really hope there comes a time in the not too distant future where I can reliably install this on my gaming PC and say goodbye to Microsoft. People who are smarter than me... I have a Geforce 3080 - will I ever be able to do this?

I recommend trying linux mint on your pc right now through a virtual machine if you have some space for it. Mint is a great "just works" version to be on. It's the most similar to windows and it has an easy "app store" so to say to get your programs from. Steam will take care of you for games
You can also wait for valve to drop steam os for desktops. It's been a great os on the deck if a bit buggy at times, but where steamos is NOW compared to when I just got my deck is a night and day difference in both features and stability

Nvidia stuff has historically been kind of a pain on Linux because they insist on closed source drivers and stalled on implementing Wayland for a decade.
