Maple is the weapon of choice in our house.

Always real maple. For years my grandfather would work his tap circuit and boil down the sap.
Some years we'd also make violet syrup. Have made a few batches over the years, esp in one house that hosted a big crop every Spring. Toughest part is just picking them.
