Besides Plex apps and Home Assistant, probably NextCloud. Having all my storage synced is great. I use some apps like Deck in NextCloud. Having photos from phone auto upload to server when I'm home is really nice.
Dokuwiki and Netbox always come in handy.
Actual Budget is great.

Blown away at how fully featured it is. Could easily run a small business from it. If only MS365 could be this nice 🤥

I drop nextcloud and after a short test not retain OCIS.
I stay on test pydio-cells, it runs great for teams work for example.

Home Assistant & Plex (+additional apps like *arr, Tautulli, etc) are my main ones. HA does so much it's almost endless, I have dashboards for monitoring everything in my lab and home along with automations. Dozzle is useful for an all-in-one log viewer.

Anything that I would normally have to pay for to get a good experience. Like a password manager, I use Vaultwarden. GitLab for all my private code repos. Plex replaces all of my streaming subscriptions, including Spotify (Plexamp). For external access I use Cloudflare Tunnels.
