Honest question because I have no idea how these things work on the org side: is there a chance they're commited to a specific charity in a way that's not easy to change on relatively short notice? Like if something was arranged a year previous right after the previous event that they're locked into

Agreed. It’s frustrating that cons just stick to animal charities when there’s imminent threats to the life and liberty of queer people, who make up such a huge percentage of the fandom.
Furpocalypse has been supporting a local queer charity org called Q Plus since 2022, which sprang from a similar now-defunct org called True Colors, which they supported in 2018 and 2019.
An easy suggestion was paying for classes/equipment, heck even equipment/materials for panelists.
A difficult suggestion was helping artists move out of struggling countries.
I understand the process of choosing who gets help would be difficult, but none of it was even up for consideration.

I don't know how difficult that would be to change; it might require filing as a new non-profit entity.
Megaplex did that to CARE, changing charities at the last minute and I'm forever angry about that.
