I don't know why but that gritty stuff for magic is fun for me just because I've got enough freedom to play it by ear and just slowly build how it functions.

I think it might have to do with magic being unknowable, right? Like... if there a system to it, its mostly just Weird Science. But if even the GM and worldbuilder has no idea how it works, then its truly magic!
I think there's always a core of it that is genuinely unknown.
Like say...WHERE magic came from and how exactly it functions.
To a degree, it's still gonna be "we don't really know, but we have theories", and that's how I tend to handle that stuff, I describe it as theories folks have, not facts.
