If you have the Regular Show S1&2 Blu Ray, they did commentaries on EVERY episode and talk a lot about the actual technical production of the show. The Gravity Falls set did this too

Oh man, when I was a teen, I watched the every episode of my Invader Zim boxset with the commentary tracks on double the amount of times I watched the episodes as they were. Huge part of making me want to get into animation

The Zim ones had so many amazing nuggets of writing talk and it was full of so many weird bits too. I'll never forget the Bad Bad Rubber Piggy episode where the staff did a bonus commentary as squealing pigs reacting to the episode

god not only was turning red one of the best pixar movies I'd seen in y e a r s (I'd honestly kinda given up), the making of that came out with the movie during covid was SO GOOD

then disney said "lets never make anything like this again"
