I tend to cycle through Canadian whiskies, and Gibson's is definitely in the rotation! It's really interesting how different ryes pair with different kinds of vermouth, one of the fun aspects of making cocktails!

I love Diffords.

I tend to buy alcohol “specimens”, like plants for a garden, so I can always find some way of making something interesting with whatever I’ve picked up, if I am at a loss.

Different pairings of rye to vermouth … I wonder if I would notice? What would be 2 really different ones?

Two of my favorites are Cocchi di Torino and Dolin (both Red or Sweet). The Cocchi is very rich and has strong chocolate notes, while the Dolin is drier and has much more herbaceous flavour. I find the Cocchi works well with a hotter, spicier whisky, while the Dolin works with a sweeter rye.

Difford's has a recipe for "Anejo Manhattans" which are also quite tasty! I would imagine they're somewhat similar, but I'll definitely give that a shot.

I don’t drink currently, but when I did, I often found rye worked better than bourbon in many classic cocktails. Some prohibition era cocktails may have originally been made with rye. Alberta Springs is nice.
