For sure prosciutto and melon also Genoa salami, manchengo (sheep cheese) Gorgonzola and some form of soft French cheese and go sliced baguette instead of crackers also red grapes
Brothers can make their own food and wash their own dishes. Or they can figure out how to purchase a premade tray and paper plates. I believe the warehouse club has lots of easy options here
I had friends who wanted potluck charcuterie for a weekend away and I was like "what? You're vegan and you're lactose intolerant, what do I bring?!" Turned out to them, charcuterie just meant "bring what you like and we'll all eat snacks for dinner."
One fun, festive thing is to do an edible candle in the center. You can buy or make a garlic butter candle or tallow (you just need an edible wick if you make it). It’s super yummy if you have a good, crusty bread with it.
