I worry that they won't take my concerns seriously because I'm a 'pushy Asian', or that their eyes will skim over my email and read it last because my name isn't English and they don't want to deal with someone they don't feel culturally on the same wavelength as because it's more of a chore.

To be fair you only need to be from outside the English speaking world for people to mispronounce and misspell your name. My first name is misspelled more often than not. Even though they have only ever seen my name in writing. Not gonna talk about pronunciations even 😂

Working with a company that is legitimately collecting customer information - and they continually think customer names are always "Englishified" - at least two names, always matching their legal docs, no apostrophes, umlauts etc. It also breaches the Privacy ACT obligation about accurate data
