There are other options for Samsung! Graphene is a pixel specific project, but other projects exist like LineageOS, Ubuntu Touch (older project), and CalyxOS that support Samsung devices.
Thanks for the tips. It looks like CalyxIOS no longer supports Samsung devices, and LineageOS doesn't support the model I own. But knowing kicking Google off my phone is a possibility will have me keep my eyes open for updates.
